Oregon Grape
(Mahonia aquifolium)



Oregon Grape Jam
Ingredients
3 lbs ripe berries
2 cups water
1 cup sugar per cup of sauce

Wash and stem fully ripe berries and place in saucepan with 2 cups cold water. Cook till fruit softens and juice runs freely. Remove from heat press through a food mill. Measure pulp and add sugar accordingly. Mix thoroughly and bring to a boil. Hold boil for 15 minutes, stirring constantly. Remove from heat, skim off foam and pour into hot, sterile jars and seal.



Oregon Grape Jelly
Ingredients
8 cups ripe berries
1½ cups sugar per cup of juice

Wash and stem fully ripened berries. Place in large saucepan. Crush fruit with potato masher. Add a little water for cooking and bring to a boil. Cook over medium heat for 10 minutes. Strain through jelly bag. Measure and add sugar. Mix thoroughly and bring to a boil. Boil till sugar is completely dissolved. Skim foam and pour into hot, sterile jars and seal.



Oregon Grape Spiced Jelly
Ingredients
4 cups ripe berries
1/3 cup water
¾ cup cider vinegar
4 cups sugar
1 tbsp ground cinnamon
½ tbsp ground allspice
4 whole cloves

Wash and clean berries and place in a saucepan with the water, vinegar, sugar and spices. Mix ingredients well and bring to a boil, then simmer for 30 minutes. Stir occasionally and keep covered. Remove from heat and strain through a jelly bag. Bring juice to a boil for 1 full minute, then skim of foam and pour into hot, sterile jars and seal.
