TEA
(Camellia sinensis)

GREEN: Fresh leaves are spread on racks in sheds and allowed to wilt for 24 hours; then squeezed in giant rollers; then dried quickly.

OOLONG: Leaves are allowed to ferment several hours before drying.

BLACK: Fermented longer than oolong.

SCENTED: Dried tea with flavor enhanced by steaming it with fresh fragrant flowers (i.e. Jasmine, Rose) till tea absorbs fragrance and flavor of blossoms. Leaves are then dried again.
